Ingredients:

  • 1 cup basmati rice

  • 1 inch piece of ginger, grated
  • 2-3 ripe tomatoes, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 cups water
  • Fresh cilantro leaves, chopped (for garnish)

Instructions:

  1. Rinse the rice in cold water and soak it in water for 20-30 minutes.
  2. Heat the oil in a pot or pan over medium heat. Add the chopped onions, garlic, and grated ginger and sauté for a few minutes until the onions are translucent.
  3. Add the chopped tomatoes to the pot and cook for 5-7 minutes until the tomatoes are soft and mushy.
  4. Add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt to the pot and mix well. Cook for 1-2 minutes until the spices are fragrant.
  5. Drain the soaked rice and add it to the pot. Mix well so that the rice is coated with the tomato mixture.
  6. Add 2 cups of water to the pot and stir well. Bring the mixture to a boil.
  7. Reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
  8. Once the rice is cooked, remove the pot from the heat and let it sit for 5-10 minutes.
  9. Fluff the rice with a fork and garnish with fresh chopped cilantro leaves.
  10. Serve hot with raita, papad, or any side dish of your choice.

  • 2 tbsp. ginger-garlic paste
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 1 tsp. garam masala
  • 1 tsp. red chili powder
  • 1/2 tsp. turmeric powder
  • Salt to taste
  • 4 tbsp. vegetable oil
  • 2 tbsp. ghee
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2-3 green chilies, slit
  • 2 cups water

Instructions:

  1. Rinse the basmati rice in cold water and soak it in water for 20 minutes.
  2. Heat the vegetable oil in a pan and sauté the sliced onions until they are golden brown. Remove them from the pan and set aside.
  3. In the same pan, add the ginger-garlic paste and sauté for a minute.
  4. Add the chicken pieces to the pan and cook for 5-7 minutes until they are lightly browned.
  5. Add the cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt to the pan and cook for a few minutes.
  6. In a separate pot, bring 2 cups of water to a boil and add the soaked rice. Cook the rice for 10-12 minutes until it is almost done.
  7. Add the cooked chicken mixture to the rice and mix well.
  8. Layer half of the rice and chicken mixture in a deep dish. Sprinkle half of the fried onions, cilantro, mint leaves, and green chilies on top.
  9. Layer the remaining rice and chicken mixture on top of the first layer. Sprinkle the rest of the fried onions, cilantro, mint leaves, and green chilies on top.
  10. Drizzle the ghee over the top layer and cover the dish with a tight-fitting lid.
  11. Place the dish in a preheated oven at 350 degrees Fahrenheit and bake for 20-25 minutes.
  12. Serve hot with raita or any side dish of your choice.

Dattatreya Ramachandra Bendre, also known as Dara Bendre, was a prominent Kannada poet, writer, and philosopher. He was born on January 31, 1896, in Dharwad, Karnataka, India. Dara Bendre received his early education in Kannada and Sanskrit and went on to study at the Fergusson College in Pune, Maharashtra. He was deeply influenced by the Bhakti movement and the works of the 12th-century poet and philosopher, Basavanna. Dara Bendre began his literary career as a playwright, but later turned to poetry and became one of the most influential poets in Kannada literature. His poetry is known for its lyrical quality, rich imagery, and philosophical depth. He wrote about a wide range of themes, including love, nature, spirituality, and social issues. Dara Bendre's most famous works include his collections of poems, "Naku Tanti" (I Am a Weaver) and "Mohana Kavi" (Enchanting Poet). He also wrote several essays on philosophy and literary criticism. Dara Bendre received many honors during his lifetime, including the Sahitya Akademi Award for his book "Naku Tanti" in 1968. He passed away on October 26, 1981, in Dharwad, Karnataka, India. Dara Bendre's legacy as a poet, writer, and philosopher continues to inspire people to this day. He remains one of the most revered figures in Kannada literature and his works continue to be widely read and studied.
