Tomato rice |
Tomato rice is a flavorful and easy-to-make dish that is perfect for a quick lunch or dinner. Here's a simple recipe for tomato rice:
Ingredients:
- 1 cup basmati rice
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 1 inch piece of ginger, grated
- 2-3 ripe tomatoes, chopped
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 2 cups water
- Fresh cilantro leaves, chopped (for garnish)
Instructions:
- Rinse the rice in cold water and soak it in water for 20-30 minutes.
- Heat the oil in a pot or pan over medium heat. Add the chopped onions, garlic, and grated ginger and sauté for a few minutes until the onions are translucent.
- Add the chopped tomatoes to the pot and cook for 5-7 minutes until the tomatoes are soft and mushy.
- Add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt to the pot and mix well. Cook for 1-2 minutes until the spices are fragrant.
- Drain the soaked rice and add it to the pot. Mix well so that the rice is coated with the tomato mixture.
- Add 2 cups of water to the pot and stir well. Bring the mixture to a boil.
- Reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
- Once the rice is cooked, remove the pot from the heat and let it sit for 5-10 minutes.
- Fluff the rice with a fork and garnish with fresh chopped cilantro leaves.
- Serve hot with raita, papad, or any side dish of your choice.
