rice, meat, and spices. There are many different types of biryani, and the ingredients and cooking methods can vary depending on the region and the cook.
Here is a simple recipe for chicken biryani:
Ingredients:
- 2 cups basmati rice
- 1 lb. boneless chicken, cut into bite-sized pieces
- 2 onions, thinly sliced
- 1/2 cup plain yogurt
- 2 tbsp. ginger-garlic paste
- 1 tsp. cumin powder
- 1 tsp. coriander powder
- 1 tsp. garam masala
- 1 tsp. red chili powder
- 1/2 tsp. turmeric powder
- Salt to taste
- 4 tbsp. vegetable oil
- 2 tbsp. ghee
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2-3 green chilies, slit
- 2 cups water
Instructions:
- Rinse the basmati rice in cold water and soak it in water for 20 minutes.
- Heat the vegetable oil in a pan and sauté the sliced onions until they are golden brown. Remove them from the pan and set aside.
- In the same pan, add the ginger-garlic paste and sauté for a minute.
- Add the chicken pieces to the pan and cook for 5-7 minutes until they are lightly browned.
- Add the cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt to the pan and cook for a few minutes.
- In a separate pot, bring 2 cups of water to a boil and add the soaked rice. Cook the rice for 10-12 minutes until it is almost done.
- Add the cooked chicken mixture to the rice and mix well.
- Layer half of the rice and chicken mixture in a deep dish. Sprinkle half of the fried onions, cilantro, mint leaves, and green chilies on top.
- Layer the remaining rice and chicken mixture on top of the first layer. Sprinkle the rest of the fried onions, cilantro, mint leaves, and green chilies on top.
- Drizzle the ghee over the top layer and cover the dish with a tight-fitting lid.
- Place the dish in a preheated oven at 350 degrees Fahrenheit and bake for 20-25 minutes.
- Serve hot with raita or any side dish of your choice.
