Lemon rice is a popular South Indian dish that is easy to make and bursting with flavors. Here's a simple recipe for making lemon rice:
Ingredients:
- 1 cup basmati rice
- 2 cups water
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 2 tbsp lemon juice
- 1/4 cup roasted peanuts
- 2 tbsp chopped coriander leaves
Instructions:
Rinse the basmati rice in water until the water runs clear. Soak the rice in water for 20 minutes and then drain the water.
In a pot, add 2 cups of water and bring it to a boil. Add the soaked rice and cook until the rice is fully cooked. Once done, let the rice cool down.
In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add turmeric powder and salt to the pan and mix well.
Add the cooked rice to the pan and mix well with the spices.
Add lemon juice to the pan and mix well.
Add roasted peanuts and chopped coriander leaves to the pan and mix well.
Lemon rice is ready to serve. You can garnish it with more coriander leaves and serve it hot.
